There's something deeply comforting about waking up to a stack of warm pancakes, especially when you know they're genuinely nourishing your body.

Pancakes don't have to be an indulgent treat reserved for special occasions. Normally, they're loaded with refined sugar, white flour and fried in seed oils. But whole food cooking is a great way to transform them completely.

What I love most about this recipe is how simple it is. Just a handful of wholesome ingredients, no complicated techniques, and the result is something that tastes indulgent while actually fuelling your body with nutrients. Whether you're making them for Pancake Day or just meal prepping breakfast for the week ahead, these pancakes prove that healthy eating doesn't have to feel like a compromise.

Let's talk about sweet potatoes for a moment, because they're truly the star of this recipe. I used white flesh sweet potatoes for these pancakes, which I picked up from my local international food store.

The natural sweetness of sweet potatoes also means we don't need to add any refined sugar to these pancakes... Nature has already done the work for us. Enjoying Your Pancakes

These pancakes are delicious on their own, but they're also wonderful topped with fresh fruit, a dollop of nut butter, or a drizzle of pure maple syrup if you want a touch of extra sweetness. I often enjoy mine with sliced banana and a sprinkle of crushed pecans, or with berries for a pop of colour and additional antioxidants.

  3. Add the soy milk to the mashed sweet potatoes and mix until well combined.

  4. In a separate bowl, combine the oat flour, ground flaxseeds, cinnamon, and nutmeg.

  5. Gently fold the dry ingredients into the wet mixture until just combined. Don't overmix.

  6. Shape the pancakes onto your prepared baking tray.

  7. Bake for 20 minutes at 180°C.

  8. Allow to cool for 1-2 minutes before carefully removing from the tray.

  9. Store extras in the refrigerator for up to a week, or freeze for longer storage. Reheat in the oven when ready to enjoy.

Makes 15 large pancakes.
